Sweet Potato Soup with Coriander and Crème Fraiche



4 Sweet Potatoes

2 Onions

2 Normal Potatoes

2 Cloves Garlic

Chicken Stock (Or Veg If You Are A Veggie)


Creme Fraiche



Peel the onions and chop finely

Peel the potatoes and chop into small cubes

Peel and chop two cloves of garlic into small pieces

Heat up a large pot and add olive oil

Throw in the onions, garlic and potatoes. Cook these over a low to medium heat for about 2/3 minutes stirring them the odd time

Peel the sweet potatoes and chop them up

Throw them in to the pan and stir them around for a few minutes

Grab your stock cubes and put them in to some hot water so as they melt

Pour that in to the soup and cover all the ingredients completely and then turn it up

Chop a good handful of the coriander and stir it in with some crème fraiche

Stir the soup occasionally

Simmer the soup for a good 20/25 minutes or until everything is soft

When it is use a food processor, blender or soup gun to blend it until all smooth, the smoother the better

Add the coriander and a small amount of crème fraiche to garnish.
